The grapes harvested for the production of sweet wines have a high sugar level and

during the fermentation process it must be cut before the yeasts turn all the sugar into alcohol.

 

Late Harvest wines are made with the latest grapes harvested just before becoming raisins. This results in a higher concentration of sugars, which makes it a very sweet wine, ideal for accompanying desserts and cakes.
